one of the best resources i’ve found since getting into hiking is Aaron Owens Mayhew’s Backcountry Foodie. through her website you can access hundreds of “ultralight” recipes designed to provide great taste and nutrition on the trail. (this isn’t sponsored content, but i am a big fan and membership holder.)
in this video i prep four servings of sun-dried tomato couscous, a cold soak recipe that i’ve enjoyed many times. i had to go off-script a bit due to not having all the exact right ingredients in my pantry, but i’m sure it’ll turn out just fine. time will tell!
(in a follow-up video i’ll try to cram this and a bunch of other food into a USPS flat rate box to ship to california this summer for my ongoing pacific crest trail adventure!)
my trail name’s mythic and in 2026 i’m continuing my multi-year thru-hike (m.y.t.h.) of the pacific crest trail. as i prepare to return to the pct (and hopefully tackle other section- and thru-hikes in the future), i'm going on day hikes to help keep in trail shape!
